Cheesy Baking Powder Biscuits - Vegan and Gluten Free
You can use whatever shredded dairy free cheese you have on hand.

Turn oven to 450 degrees F
- Place the flour, baking powder, salt, and xanthan gum in a food processor or medium bowl and sift together.
- Add the butter to the food processor and pulse until crumbly (if no food processor, just cut in the cold butter as best you can).
- Stir in the cheese and mix well. Make a well in the center.
- Pour in the milk and stir well to incorporate. You want the dough to be soft and to pull away from the sides of the bowl.
- Place a piece of parchment on your surface and sprinkle with gf flour. Lightly flour your hands and rolling pin and take 1/2 of the dough out. Roll it out to 1/2 inch - 1 inch thick, cut into rounds with a biscuit cutter or mason jar lid. Set cut pieces aside and add trimmings back to the dough. Keep working until you've used all the dough.
- Place on parchment lined baking sheet and bake at 450 for 12-15 minutes.
