Cheesy Baking Powder Biscuits - Vegan and Gluten Free

You can use whatever shredded dairy free cheese you have on hand.

Turn oven to 450 degrees F
  1. Place the flour, baking powder, salt, and xanthan gum in a food processor or medium bowl and sift together.
  2. Add the butter to the food processor and pulse until crumbly (if no food processor, just cut in the cold butter as best you can).
  3. Stir in the cheese and mix well. Make a well in the center.
  4. Pour in the milk and stir well to incorporate. You want the dough to be soft and to pull away from the sides of the bowl.
  5. Place a piece of parchment on your surface and sprinkle with gf flour. Lightly flour your hands and rolling pin and take 1/2 of the dough out. Roll it out to 1/2 inch - 1 inch thick, cut into rounds with a biscuit cutter or mason jar lid. Set cut pieces aside and add trimmings back to the dough. Keep working until you've used all the dough.
  6. Place on parchment lined baking sheet and bake at 450 for 12-15 minutes.
