Pear Tart - Gluten and Dairy Free

I stumbled upon a lovely blog called Art of Living Naturally while in search of an easy pear tart recipe. I needed something no-fuss because I hadn’t been feeling well earlier in the week and this press-in crust sounded just perfect. I’m definitely revisiting this crust as it has a great flavor and crumb. A terrible thing happened after snapping the photos, however, as I tripped and dropped the entire tart upside down. I managed to salvage most of it, and as you can see, I even got a few triangular shaped slices out of it! My omnivorous husband (aka eats lots of gluten and dairy and has no issues) loved it - and the leftovers were delicious warmed up with some dairy free vanilla ice cream.

Instructions

Prepare the Crust
  1. Preheat oven to 425
  2. Whisk the flour and salt together in a medium bowl.
  3. In a separate bowl whisk together the oils, maple syrup, milk, and vanilla.
  4. Pour the wet ingredients into the dry and mix gently.
  5. Press into a 9 inch tart pan just shy of the top, basically you want to press up the sides but make sure it's thick enough around the edges to hold its shape when finished. I like to err on the shorter side for this.
Make the Filling
  1. Combine the pears, cinnamon, lemon juice, and maple syrup in a medium bowl and mix with your hands until all the slices have been evenly coated with cinnamon.
  2. Arrange the pear slices into the prepared pastry in a circle, working from the outside in.
Topping and Baking
  1. Combine the ingredients for the topping in a small bowl and mix lightly with a fork. Using your fingers, sprinkle the topping evenly over the arranged pear slices and bake for 35-45 minutes. The crust should be golden brown and the topping will be slightly shiny and bubbling.
